               FRESH              DRY
1★         New Mexican                        Use fresh in green chili sauces and stews
2★         Poblano             Ancho         Use dried in soups, salads, and stews
2★-3★  Chilaca              Pasilla         Use dried in Mexican sauces
3★         Jalepeno           Chipotle       Use fresh/day in nachos, sauces, salsas, 
                                                                 and tamales
3★-4★  Serrano                                 Thick-fleshed pepper used in sauces, salsas, 
                                                                 and stews 
4★                                   Cascabel    Use dried in soups, sauces, and salsas
7★-8★  Thai                                      Use either the red or green variety in
                                                                  Southeastern Asian dishes
8★                                   Pequin        Use dried or pickled in Mexican dishes
10★       Habenero                              Red, yellow, green, and orange varieties are 
                                                                 all 30 times hotter than a jalapeno pepper
                                                                 and used in Mexican and Caribbean dishes.
