Their robust taste (A Sonnet)
Their robust taste will come but once a year,
Anticipation calls the eyes to seek,
To miss the harvest forms a faceless fear,
When Roasted Red Hatch Chilies reach their peak.
New Mexico in August is the time,
In the magical green valley called Hatch,
Delicious peppers crimson in their prime,
With flavored heat extremely few can match.
Roasted Red Hatch Chilies with roasted pork,
A favored spicy-sweet and meaty meal,
So tender you can cut it with a fork,
In '82 the shortage was surreal.
My cravings for Peppered Pork was severe,
My one regret it couldn't be fixed that year.
