Texas Cow Patties
The year we moved from Texas to Florida, one of my stepdaughters sent a box of “Texas Cow Patties” to us for Christmas. I wonder if she was trying to tell us something… No matter. They were scrumptious!

I saved the box so I could locate the company and buy some more of this delicacy, but there was no address on the box. It was 1986, and we didn’t even own a computer, let alone have ability to search this vast earth in search of the company or a similar recipe.

As often happens, that incident was pushed into the back, and dusty, volumes of my memory until a friend recently handed this recipe to me for Texas Cow Patties. We’ve sampled this recipe, and even changed it a bit. It may or not be the same recipe of the gift received long ago, but it is excellent!

Try this one, and think of me in Texas!


Texas Cow Patties

2 cups margarine, softened
2 cups sugar
2 cups firmly-packed brown sugar
4 eggs
2 teaspoons vanilla
2 cups quick-cooking oats
2 cups corn flakes
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 (6-ounce) package semisweet chocolate chips
2 cups chopped broken pecans


Cream margarine, sugar, and brown sugar together until light and fluffy. Add eggs, 1 at a time, beating well as each egg is added. Stir in vanilla. Add oats and corn flakes to creamed mixture, mixing thoroughly. Sift flour, baking powder, and baking soda together. Gradually add dry ingredients to creamed mixture, beating slowly to mix. Stir in chocolate chips and pecans. Drop by rounded tablespoons onto greased cookie sheets. Bake on top rack of over at 325° for 17 minutes. Cool on wire rack. Makes about 2 dozen.
